A Thai paste made in Thailand by a Thai company to a Thai recipe, not a version reformulated for export. The same rule applies to every platform.
The producer's own standards
We look for producers with recognised food-safety certification, transparent ingredient declarations, and a willingness to share specifications, allergen statements and certificates of analysis before we place a first order.
Tasted, then cooked
Every candidate is tasted against alternatives and then cooked in real dishes, by us and by chefs from our network, before it is shortlisted. Sensory notes and kitchen trials decide, not the brochure.
A range, not a single hero
We prefer producers who can supply a coherent range, retail and foodservice formats, so a kitchen can standardise on one supplier for a cuisine.
Named only when signed
A producer's name appears on this site only once an agreement is in place. Until then products are listed as coming soon and the brand pages stay closed. It is a small discipline that keeps our word to producers and to customers.
