Description

Chipotles are ripe jalapeños smoked over wood, here simmered in a tangy adobo of tomato, vinegar, garlic and spices. One chilli with a spoon of its sauce is enough to season a pot of beans, a marinade or a mayonnaise with smoke and a slow heat.

Freeze leftover chillies in the sauce; they keep for months.
