What defines it

Real Mexican cooking is built on dried chillies, each with its own character, toasted and soaked and blended into sauces, and on corn treated with lime to make masa. Heat is only one part of it; the chillies are used for their fruit, smoke and colour as much as their fire. Salsas, made fresh, sit on every table and change with the region.

Dried chillies as the base of sauces, used for depth as much as heat; corn as masa, not cornflour; fresh salsas at every meal; lime and coriander as the finishing acid and herb; slow-cooked braises and quick grilled meats side by side.

From Oaxaca's moles to the al pastor of Mexico City and the seafood of Baja, Mexican food has more regional variety than most cuisines, but a small number of pantry items unlock most of it: ancho, guajillo and chipotle chillies, tomatillos, masa harina and Mexican oregano.

For Indian kitchens the affinity is obvious: chillies, corn breads, lime and coriander are already familiar, and the dried-chilli technique translates directly. What has been missing is authentic supply rather than adapted seasoning mixes.
