Description
Ancho is the dried poblano: broad, wrinkled and dark, with a mild heat and a sweetness like raisins and plum. It is the workhorse chilli of Mexican sauces, toasted, soaked and blended into enchilada sauce, mole and adobo marinades.
Whole dried chillies, stems on, from Mexico. Toast briefly on a dry pan before soaking.
