Description
Doenjang is the aged soybean paste that gives Korean food its depth: whole soybeans fermented into blocks, then aged in earthenware with brine. Coarser and more rustic than Japanese miso, with a strong savoury character that stands up to long cooking.
The base of doenjang jjigae and ssamjang, and a seasoning for braises, dressings and vegetable dishes.
