How to use it

Coarse flakes for kimchi and stews; fine powder for gochujang and dressings. It is not interchangeable with cayenne or Indian chilli powder, both of which are far hotter and lack the sweetness.

Where it comes from

Korean chillies are milder and sweeter than most, and drying them in the sun rather than by heat keeps the colour vivid. Gochugaru is the single ingredient that most defines the look of Korean food.
