How to use it

Add a few drops at the end of a dish or into a marinade; never fry in it at high heat, which turns it bitter. Korean sesame oil is pressed from more deeply toasted seeds than most and is correspondingly stronger.

Where it comes from

Korean households once pressed their own at neighbourhood mills; the aroma is so central that a dish of namul (seasoned vegetables) is judged partly on it.
