Description

Panko are the large, airy Japanese breadcrumbs made from crustless bread, which fry to a light, shattering crust that stays crisp. For tonkatsu and chicken katsu, ebi fry, korokke and as a topping for baked dishes.

Absorbs less oil than fine breadcrumbs, so the result is crisper and lighter.

How to use

Dredge a pork or chicken cutlet in flour, then beaten egg, then panko, pressing the crumbs on, and shallow-fry at 170 °C for four minutes a side. Toss with butter and scatter over a gratin. Mix with parmesan for a crust on baked fish.
