Description

Pomegranate molasses is pomegranate juice reduced until it is thick, dark and sour-sweet. A spoonful gives fattoush its dressing, muhammara its tang and a glaze for roasted meat or aubergine its shine.

Pure reduced juice, no added sugar. A little goes a long way.

How to use

Whisk a tablespoon with olive oil, lemon and salt for fattoush. Blend into muhammara with roasted red pepper and walnuts. Brush over lamb, chicken or aubergine in the last minutes of roasting. A teaspoon lifts a lentil soup.
