Description
Masa harina is corn that has been cooked with lime (nixtamalised), dried and ground, which is what makes it form a dough with water alone. It is the flour for corn tortillas, tamales, sopes and gorditas, and a thickener for chilli and pozole.
Plain cornflour and polenta will not do the same job; the nixtamalisation is the point.
