Description
Nam prik pao is Thailand's roasted chilli jam: dried chilli, shallot, garlic and dried shrimp roasted, pounded and cooked with tamarind and palm sugar into a dark, sweet, smoky paste. It is the secret depth in tom yum and a stir-fry sauce by itself.

Dried red chilli (spur)
Warm, rounded heat with a raisin-like sweetness and a faint smokiness; far less sharp than fresh bird's-eye.

Fruity sourness with a date-like depth; softer than lime, rounder than vinegar.
-
Shrimp paste
Deeply savoury and salty with a pronounced fermented aroma that mellows completely once cooked.
