Description
Gochugaru is Korean chilli in flake form: sun-dried, deseeded and coarsely ground so that it colours a dish bright red without overwhelming heat. It is the chilli in kimchi, the warmth in soft-tofu stew and the red in most Korean marinades.
Fruity and mild by Indian standards, closer to Kashmiri chilli than to bird's-eye. Keep it in the freezer once opened to hold its colour.
